Ingredients/Components

  • vegetable oil - 1/4 c
  • all-purpose flour - 1/4 c
  • stalks celery, chopped - 2 item
  • green onion, chopped - 1/4 item
  • small bell pepper, chopped - 1 item
  • cajun seasoning
  • file powder - 1 item
  • cans tomatoes, cut up - 2 oz
  • fish stock, chicken broth or diluted clam juice - 2 c
  • seafood of choice shrimp, crab or oysters

How to make seafood gumbo:

Cook flour and oil in a heavy saucepan over medium heat; stir frequently. When it begins to brown (after 10 to 15 minutes), stir constantly. When mixture is a deep reddish-brown (after 10 minutes), add bell pepper, celery and onions.

Saute over medium heat until vegetables are tender. Stir in stock, tomatoes and seasoning. Bring mixture to a boil and reduce heat. Cover and cook over low heat for 15 to 20 minutes. Serve with hot rice and a sprinkle of file powder. Serves 6.
