Ingredients/Components

  • sour cream - 1 c
  • egg - 1 item
  • chopped onion - 2 Tbsp
  • can whole tomatoes - 1 item
  • cumin - 1/2 tsp
  • corn chips - 2 c
  • Cheddar cheese - 3/4 c
  • green chilies - 1 Tbsp
  • cut up cooked chicken - 2 c
  • Monterey Jack - 1 c

How to make mexican chicken bake:

Combine chicken, tomatoes, onions, chilies and cumin. Mix well. Blend sour cream, 3/4 cup Cheddar, Monterey Jack and egg. Spread half the corn chips in casserole. Layer with half chicken mixture and half the sour cream mixture. Repeat and top with remaining chips and 1/4 cup Cheddar. Bake until done.
