Ingredients/Components

  • salt - 2 Tbsp
  • brown sugar - 1 tsp
  • water - 2 qt
  • shortening - 2 Tbsp
  • all-purpose flour - 1 c
  • Worcestershire sauce - 1/2 c
  • cloves garlic, minced - 2 item
  • catsup - 1/2 c
  • lemon juice to taste - 1 item
  • parsley, chopped - 1/2 c
  • stalks celery, chopped - 8 item
  • bay leaves - 2 item
  • can tomatoes - 1 oz
  • thyme - 1/4 tsp
  • crabmeat - 1 lb
  • chicken stock - 2 qt
  • rosemary - 1/4 tsp
  • bunch green onions, chopped - 1 item
  • bacon drippings - 1 c
  • Tabasco sauce to taste - 1 item
  • boiled shrimp - 3 4
  • cooked chicken, chopped - 2 c
  • large yellow onions, chopped - 3 item
  • okra, sliced - 1 lb
  • oysters optional - 1 pt

How to make seafood gumbo:

In a skillet, heat bacon drippings and while stirring constantly, add flour until the mixture becomes a dark brown. To this, add celery, onion, green pepper, garlic and parsley. Cook 5 minutes over a medium heat or until tender.

In a separate skillet, fry okra until it is slightly browned. Add okra to first mixture and stir well for several minutes. Add chicken stock and water, salt, Worcestershire sauce, Tabasco sauce, catsup, thyme and tomatoes. With the juice from ham, add rosemary and bay leaves. Cook on low heat for 2 1/2 hours. Add shrimp, chicken and crabmeat. Simmer 30 minutes.

As a finishing touch, add brown sugar and the juice of lemon. Serves 20.
