  • flour - 1/2 c
  • butter - 1/2 c
  • heavy cream - 1 c
  • chopped onion - 1 c
  • chopped celery - 1/2 c
  • oregano - 1/8 tsp
  • grated Swiss cheese - 1/3 c
  • corn tortillas - 16 item
  • chicken stock - 1 c
  • chopped bell pepper - 1/2 c
  • crab - 1 lb
  • grated Monterey Jack cheese - 2 c
  • chopped jalapenos optional - 4 item
  • chopped seeded jalapenos optional - 1 Tbsp

How to make seafood enchiladas:

Filling:4 oz. cream cheese1/2 c. sour cream4 chopped jalapenos (optional)1 lb. crab Melt butter. Add flour; whisk and cook for 5 minutes. Saute vegetables. Add stock, seasonings and cream. Cook for 10 to 15 minutes. Add remaining ingredients
