- corn tortillas - 8 item
- shredded Monterey Jack cheese - 2 c
- chopped onion - 3/4 c
- butter - 1/4 c
- flour - 1/4 c
- chicken broth - 2 c
- can deboned chicken or cooked cubed chicken - 1 item
- sour cream - 1 c
- chopped bell pepper - 1/4 c
- to 6 jalapenos, chopped to desired hotness! - 4 item
How to make chicken enchiladas:
Lightly fry tortillas to soften, one at a time. Fill each with 2 tablespoons cheese and a sprinkle of onion. Roll and place in a 9 x 13-inch baking dish. Melt butter. Blend in flour. Add chicken broth, stirring constantly, until thickened. Stir in chicRecipe categories: Chicken, Main dish, Poultry.
