Seafood enchiladas
Ingredients/Components
- half and half - 1 c
- sour cream - 1 c
- butter - 1/2 c
- chopped onion - 1 item
- crabmeat - 1/2 lb
- cumin - 1 tsp
- flour tortillas - 1 item
- chopped cilantro - 1 item
- shredded Cheddar - 8 oz
- Mozzarella - 4 oz
- peeled, deveined, halved shrimp - 1/2 lb
How to make seafood enchiladas:
Preheat oven to 350°. Spray 9 x 12 pan with Pam. In large mixing bowl, combine cheeses, sour cream, half and half and butter. Heat in microwave for 2 1/2 minutes; stir and repeat.Chop onion and saut in olive oil until soft. Add cumin, crabmeat and shrimp. Saut for 5 minutes, stirring frequently. Cut tortillas into quarters and layer in the bottom of pan. Add a layer of the seafood mixture. Top with 1/2 of the cheese sauce. Repeat. Bake for 30 minutes.
