Scottish shortbread

- sugar - 2/3 c
- butter - 1/2 lb
- flour, sifted - 2 c
How to make scottish shortbread:
Cream butter and sugar until light and fluffy. Add flour all at once and mix by hand. Pat onto cookie sheet, about 13 x 9-inch. Prick all over with fork. Bake at 300° for about 45 minutes. Should be a light brown. Cut into fingers while hot. Sprinkle liberally with sugar. Cool and store in an airtight tin.Recipe categories: Desserts, Eggs/dairy, Cookie and brownie.
