Ingredients/Components
- flour 4 c - 1 lb
- sugar 2 c - 1 lb
- butter 2 c - 1 lb
How to make scotch shortbread:
Do not use margarine as substitute.Mix sugar and butter until sugar dissolves. Add flour (can shorten flour by 1/4 to 1/2 cup). Roll out about 1/4-inch thick. Cut into patterns or squares (can also use spritz cookie maker). Bake at 300° for 20 to 25 minutes in ungreased pans. When light tan next to cookie sheet, remove. Take off when cooled a little. I use powdered sugar sometimes mixed with flour to roll out. Keeps very well, no refrigeration necessary.
