  • sugar - 3/4 c
  • vinegar - 3 Tbsp
  • diced onion - 1/4 c
  • diced green pepper - 1 c
  • salt optional - 1/2 tsp
  • diced celery - 1 c
  • celery seed - 1 tsp
  • diced pimentos - 3 Tbsp
  • 2 1/2 sauerkraut - 1 can

How to make sauerkraut salad:

Drain sauerkraut in colander for 15 minutes. Cut into 1 inch pieces with scissors. Place in large mixing bowl; add remaining ingredients. Mix well. Store covered in refrigerator for at least 24 hours. Will keep 2 weeks in refrigerator.
