Salade nicoise
Ingredients/Components
- vegetable oil - 9 Tbsp
- lemon juice - 2 Tbsp
- Dijon mustard - 2 tsp
How to make salade nicoise:
Mustard Vinaigrette: Mix ingredients together well.Salad: Boil potatoes; cook until tender, but not too soft (about 10 minutes). Peel and slice. Cut green beans into 1-inch lengths; cook until just crisp-tender (about 5 minutes). Drain and refresh. In a large bowl, combine potatoes, green beans, onion, olives, parsley, salt and pepper. Pour 1/2 cup Mustard Vinaigrette over the vegetables; toss gently but well. Arrange lettuce on a large serving platter. Add mixture on lettuce, followed by eggs and tomatoes in a pattern around the edge of platter. Flake the tuna over the salad; lay anchovies on top. Drizzle with additional Vinaigrette. Garnish with peppers. Serves 4 to 6.
