Ingredients/Components
- sugar - 2 c
- cinnamon - 1 item
- water - 2 c
- margarine - 1 item
- cream of tartar - 2 Tbsp
- lemon juice - 2 Tbsp
- Ritz crackers - 36 item
- grated rind of 1 lemon
- pastry for 2 crust 9-inch pie
How to make ritz mock apple pie:
Roll out bottom crust of pastry and fit into 9-inch pan. Break crackers coarsely into pastry lined pan. Combine water, sugar and cream of tartar in saucepan and boil gently 15 minutes. Add lemon juice and rind. Cool. Pour syrup over crackers; dot generously with margarine and sprinkle with cinnamon. Cover with top crust. Trim and flute edges together. Cut slits in top crust.
