Ingredients/Components
- sugar - 2 c
- cinnamon - 1 item
- butter or margarine - 1 item
- water - 2 c
- cream of tartar - 2 tsp
- lemon juice - 2 Tbsp
- Ritz crackers - 36 item
- grated rind of 1 lemon
- pastry for 2-crust 9-inch pie
How to make mock apple pie:
Roll out bottom crust of pastry, put into 9-inch pie plate. Break Ritz crackers (coarsely) into pie plate. Combine water, sugar and cream of tartar in saucepan. Boil gently 15 minutes. Add lemon juice and rind. Cool. Pour syrup over crackers, dot generously with butter or margarine. Sprinkle with cinnamon. Cover with top crust. Trim and flute edges. Cut slits in top.
