Rice salad
Ingredients/Components
- mayonnaise - 1/2 c
- green onions, chopped - 5 item
- green bell pepper, chopped - 1/2 item
- stuffed green olives, chopped - 15 item
- box chicken Rice-a-Roni - 1 item
- jars artichoke hearts, chopped - 2 oz
How to make rice salad:
Cook rice. Add onions and pepper when you add water to rice. Cook. Drain artichokes, reserving 1 cup liquid. Chop artichokes. Mix liquid, artichokes, mayonnaise and rice mixture. Add olives. Chill. Serves 4-6.Serve on lettuce leaf with congealed salad and rolls. Great for a light luncheon dish.
