Ingredients/Components
- salt to taste - 1 item
- Dijon-style mustard - 2 Tbsp
- cup vegetable oil - 1/4 item
- cups cooked rice - 6 item
- cups cooked black-eyed peas - 2 item
- 1/2 cups diced cooked ham - 1 item
- cup each diced orange, yellow and red bell peppers - 1/2 item
- cup minced scallion - 2/3 item
- cup minced parsley leaves - 1/2 item
- Add dressing and toss to combine
- cup white wine vinegar - 1/4 item
- pepper, freshly ground, to taste - 1 item
How to make rice salad:
In bowl combine all ingredients. Add dressing and toss to combine.Dressing:1 cup mayonnaise1/4 cup vegetable oil1/4 cup white wine vinegar2 Tbsp. Dijon-style mustard salt to taste pepper, freshly ground, to taste Whisk together all dressing ingredients.
