  • salt to taste - 1 item
  • Dijon-style mustard - 2 Tbsp
  • cup vegetable oil - 1/4 item
  • cups cooked rice - 6 item
  • cups cooked black-eyed peas - 2 item
  • 1/2 cups diced cooked ham - 1 item
  • cup each diced orange, yellow and red bell peppers - 1/2 item
  • cup minced scallion - 2/3 item
  • cup minced parsley leaves - 1/2 item
  • Add dressing and toss to combine
  • cup white wine vinegar - 1/4 item
  • pepper, freshly ground, to taste - 1 item

How to make rice salad:

In bowl combine all ingredients. Add dressing and toss to combine.Dressing:1 cup mayonnaise1/4 cup vegetable oil1/4 cup white wine vinegar2 Tbsp. Dijon-style mustard salt to taste pepper, freshly ground, to taste Whisk together all dressing ingredients. Add dressing to the salad and toss to combine.
