Ingredients/Components
- salt
- pepper - 1/2 tsp
- clove garlic, minced - 1 item
- chopped parsley - 2 Tbsp
- chopped green onion - 2 Tbsp
- C cooked rice - 2 item
- green peppers, sliced thin - 2 item
- pimentos, sliced thin - 2 item
- tomatoes, peeled & cooked - 4 item
- C olive oil - 3/4 item
- C wine vinegar - 1/4 item
How to make rice salad:
Combine first 6 ingredients in large bowl. Mix lightly with two forks. Beat together remaining ingredients. Pour over rice. Toss again lightly. Chill. Serve very cold. Can also use canned tomatoes instead of fresh.Recipe categories: Salads, Side dish, Chicken.
