Ingredients/Components
- salt and pepper to taste - 1 item
- minced parsley - 1/4 c
- cooked rice - 3 c
- green onions, minced - 4 item
- fresh lime juice - 1/3 c
- can black beans, drained and rinsed - 1 oz
- medium green bell pepper, chopped - 1 item
- medium red bell pepper, chopped - 1 item
How to make rice and black bean salad:
Combine first 6 ingredients in a large bowl. Whisk together oil and lime juice in a small bowl. Pour over rice mixture and toss to coat. Season with salt and pepper. Cover and refrigerate.Recipe categories: Salads, Rice, Black beans.
