Ingredients/Components

  • cinnamon - 1 tsp
  • vanilla
  • granulated sugar - 1/2 c
  • salt - 1/2 tsp
  • flour - 2 c
  • brown sugar
  • butter - 1/2 c
  • baking soda - 1/2 tsp
  • egg - 1 item
  • chopped nuts optional - 1/2 c
  • buttermilk or sour milk - 1 c
  • cut up or diced rhubarb - 2 c

How to make rhubarb coffee cake:

Cream brown sugar and butter. Add egg and mix well. Add sifted dry ingredients alternately with combined buttermilk and vanilla. Stir in rhubarb. Stir in nuts if being used. Pour into greased 8 x 12-inch or 9 x 14-inch baking pan. Sprinkle with 1/2 cup granulated sugar mixed with cinnamon. Bake in 350° oven for 35 to 40 minutes.
