  • sugar
  • eggs - 2 item
  • vanilla - 1 tsp
  • chopped pecans - 1 c
  • buttermilk - 1 c
  • baking soda - 1 tsp
  • powdered sugar - 16 oz
  • red food coloring - 2 tsp
  • cream cheese, softened - 8 oz
  • white vinegar - 1 tsp
  • plain flour, sifted
  • oil Crisco or Wesson
  • Mix sugar and egg yolks with electric mixer

How to make red velvet cake:

Separate eggs and set egg whites aside. Mix sugar and egg yolks with electric mixer. Add buttermilk. Mix well. Sift flour and baking soda together. Add flour and oil, about one third at a time, into the sugar mixture. Make sure flour is the last ingredient added. Add vanilla, red food coloring and vinegar. With clean beaters, beat egg whites until stiff. Fold into mixture. Spoon into three 9-inch cake pans sprayed with nonstick baking spray. Bake in a preheated 350° oven for approximately 30 minutes or until cake pulls away from sides of the cake pan.Icing:1 stick butter, softened8 oz. cream cheese, softened16 oz. powdered sugar1 c. chopped pecans Cream butter and cream cheese together; add sugar and mix well. Stir in nuts and spread between layers and on top. Make sure layers are cool before icing.
