Red beans and rice
Ingredients/Components
- butter or margarine - 1/2 c
- salt - 2 tsp
- water - 4 qt
- dried whole oregano - 1/2 tsp
- garlic powder - 1/8 tsp
- ground red pepper - 1/2 tsp
- chopped onion - 3/4 c
- chopped celery - 3/4 c
- chicken broth
- chopped green pepper - 3/4 c
- finely chopped fresh parsley - 1/2 c
- finely chopped onion
- finely chopped green pepper
- minced garlic - 2 tsp
- bay leaves - 2 item
- finely chopped celery
- dried whole thyme - 1 tsp
- dash of ground red pepper - 1 item
- Hungarian paprika - 2 tsp
- dried red kidney beans - 1 lb
- andouille sausage or smoked Polish sausage, cut into 1-inch pieces - 1 lb
- Oven Rice - 1 item
- Place in a 6-quart Dutch oven
How to make red beans and rice:
Sort and wash beans. Place in a 6-quart Dutch oven. Cover with water 2-inches above beans. Let soak overnight. Drain beans. Add 4 quarts water. Bring to a boil. Reduce heat to medium. Cook, uncovered, 1 1/2 hours, stirring beans occasionally.Saute onion, celery, green pepper and garlic in butter in a large skillet until tender. Stir sauteed vegetables and next 6 ingredients into beans. Cook, uncovered, 1 hour, stirring occasionally and adding water, if necessary.
Bake sausage at 350° for 20 minutes. Drain well. Stir sausage into bean mixture. Cook, uncovered, 30 minutes, stirring occasionally. Remove bay leaves. Stir in chopped parsley. Serve over Oven Rice. Yields 6 servings.Oven Rice:1 1/2 c. uncooked regular rice2 1/2 c. chicken broth1 1/2 Tbsp. finely chopped celery1 1/2 Tbsp. finely chopped onion1 1/2 Tbsp. finely chopped green pepper1 1/2 Tbsp. butter or margarine1/2 tsp. salt1/8 tsp. garlic powder dash of ground red pepper pinch of white pepper Combine all ingredients in a 2-quart baking dish, stirring well. Cover and bake at 350° for 1 hour or until all liquid is absorbed. Yields 6 servings.
