Ingredients/Components
- sugar - 2 c
- eggs - 4 item
- vanilla - 1 tsp
- salt - 3/4 tsp
- baking powder - 2 tsp
- baking soda - 1 tsp
- vegetable oil - 1 c
- all-purpose flour - 2 c
- chopped nuts optional - 1/2 c
- powdered sugar - 2 c
- raisins optional - 1/2 c
- plus 2 Tbsp - 1/4 c
- ground cloves - 1/4 tsp
- ground cinnamon - 2 tsp
- ground ginger - 1/2 tsp
- can pumpkin - 1 oz
- Preheat oven to 350°
How to make pumpkin spice bars:
I often make without raisins or nuts, depending on what you like.Preheat oven to 350°. Grease jelly roll pan (15 x 10 x 1-inch). Beat eggs, sugar, oil and pumpkin. Stir in remaining ingredients, except nuts. Pour into pan. Bake until light brown, 25 to 30 minutes. Cool. Frost with cream cheese frosting. May cut (chop) nuts and decorate on top of frosting.Frosting:3 oz. cream cheese, softened1/4 c. plus 2 Tbsp. margarine or butter, softened1 tsp. vanilla2 c. powdered sugar Mix cream cheese, margarine or butter and vanilla. Gradually beat in powdered sugar (may sift or put in food processor; makes sugar fine and smooth) until frosting is smooth and of spreading consistency. I may use more cream cheese.
