Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- eggs - 3 item
- vanilla - 1/2 tsp
- pkg
- salt - 1/2 tsp
- flour - 3/4 c
- butter - 4 Tbsp
- nutmeg - 1/2 tsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- powdered sugar - 1 c
- finely chopped pecans - 1 c
How to make pumpkin roll:
Filling:2 (3 oz.) pkg. cream cheese4 Tbsp. butter1/2 tsp. vanilla1 c. powdered sugar Beat eggs on high speed of mixer for 5 minutes. Gradually beat in sugar. Stir in 2/3 cup pumpkin. Stir together flour, cinnamon, baking powder, nutmeg and salt. Fold into pumpkin. Spread into greased and floured 9 x 13-inch cookie sheet. Top with the pecans. Bake at 375° for 15 minutes. Turn out on towel sprinkled with powdered sugar. Starting at narrow end, roll cake and towel together. Cool, then unroll for icing. Spread on cake.
