  • sugar - 1 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • salt - 1/2 tsp
  • flour - 3/4 c
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • pumpkin - 2/3 c
  • ginger - 1 tsp
  • finely chopped pecans - 1 c
  • lemon juice - 1 tsp
  • butter or oleo - 4 Tbsp
  • Philadelphia cream cheese - 6 oz
  • Gradually add 1 cup sugar

How to make pumpkin roll:

Beat eggs at high speed for 5 minutes. Gradually add 1 cup sugar. Stir in pumpkin and lemon juice. Sift and fold flour mixture (the remaining dry ingredients except pecans) into pumpkin mixture. Spread into greased and floured cookie sheet. Top with pecans. Bake at 350° for 15 to 20 minutes. Watch closely. When done, turn out on tea towel. Sprinkle with powdered sugar. Roll up towel and cake and cool completely. Then, unroll and spread with Pumpkin Roll Filling.Pumpkin Roll Filling:1 c. powdered sugar1/2 tsp. vanilla6 oz. Philadelphia cream cheese4 Tbsp. butter or oleo Cream all ingredients together. Spread filling on pumpkin roll cake. After spreading, roll cake back up and chill on a flat pan or serving platter.
