Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- cream cheese - 8 oz
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- chopped nuts - 1 c
- flour - 3/4 c
- butter - 6 Tbsp
- nutmeg - 1/2 tsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- ginger - 1 tsp
- sifted powdered sugar
- lemon juice - 1 tsp
How to make pumpkin roll:
Filling:1 c. sifted powdered sugar8 oz. cream cheese6 Tbsp. butter1 tsp. vanilla Cake: Sift together first 6 ingredients. Beat eggs 5 minutes. Add and beat sugar, pumpkin and lemon juice. Stir in dry ingredients. Spread in jelly roll pan which has been greased and lined with waxed paper. Sprinkle on the nuts. Bake at 375° for 15 minutes. Slightly dampen a tea towel and sprinkle with powdered sugar. Invert baked jelly roll cake pan on towel. Peel off waxed paper. Roll up towel and all and cool. Unroll cake and spread with filling. Roll back up. Wrap well and chill.To Serve: Slice into 1-inch slices and top with dollop of whipped topping.
