  • butter, softened - 1/4 c
  • sugar - 1 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1/2 tsp
  • pkg
  • salt - 1/2 tsp
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • all-purpose flour - 3/4 c
  • ginger - 1/2 tsp
  • lemon juice - 1 tsp
  • finely chopped nuts - 1 c
  • finely chopped pecans, optional - 1 c
  • Gradually beat in sugar
  • cooked, mashed pumpkin or canned pumpkin - 2/3 c
  • powdered sugar to roll in - 1 item

How to make pumpkin roll:

Beat eggs at high speed for 5 minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice. Combine flour, salt, baking powder and spices. Fold in flour mixture. Pour into a greased and floured (or Pam sprayed) jelly roll pan. Spread evenly. Bake at 375° for 15 minutes. Sprinkle powdered sugar on a soft towel, loosen cake and invert onto towel. Roll up cake in towel. Cool cake completely. Unroll and spread with filling.Filling:1 c. powdered1/4 c. butter, softened1/2 tsp. vanilla1 8 oz. pkg. cream cheese, softened1 c. finely chopped pecans, optional Combine all ingredients in small bowl. Beat on medium speed until smooth and creamy. Spread on cake and roll up. Then roll in powdered sugar. Store in refrigerator or freeze.
