Ingredients/Components
- pumpkin - 2/3 c
- sugar - 1 c
- self-rising flour - 3/4 c
- cinnamon - 2 Tbsp
- pecans - 1 c
- eggs - 3 item
- lemon juice - 1 tsp
- ginger - 1 tsp
- nutmeg - 1/2 tsp
- powdered sugar - 1 item
- butter - 1/4 c
- pkg - 2 oz
- vanilla - 1/2 tsp
How to make pumpkin roll:
Filling:1 c. powdered sugar1/4 c. butter2 (3 oz.) pkg. soft cream cheese1/2 tsp. vanilla Beat eggs 5 minutes at high speed. Gradually add sugar; stir in pumpkin and lemon juice. Combine flour and spices and fold into pumpkin mixture. Pour batter in greased cookie sheet, spreading even. Sprinkle with nuts. Bake at 375° for 15 to 20 minutes. Sprinkle powdered sugar heavily on dish towel. Invert cake on towel and roll up. Cool completely.Filling: Beat all ingredients together until smooth and creamy. After roll is completely cooled, unroll and spread with filling. Re-roll cake and chill.
