  • pumpkin - 2/3 c
  • sugar - 1 c
  • self-rising flour - 3/4 c
  • cinnamon - 2 Tbsp
  • pecans - 1 c
  • eggs - 3 item
  • lemon juice - 1 tsp
  • ginger - 1 tsp
  • nutmeg - 1/2 tsp
  • powdered sugar - 1 item
  • butter - 1/4 c
  • pkg - 2 oz
  • vanilla - 1/2 tsp

How to make pumpkin roll:

Filling:1 c. powdered sugar1/4 c. butter2 (3 oz.) pkg. soft cream cheese1/2 tsp. vanilla Beat eggs 5 minutes at high speed. Gradually add sugar; stir in pumpkin and lemon juice. Combine flour and spices and fold into pumpkin mixture. Pour batter in greased cookie sheet, spreading even. Sprinkle with nuts. Bake at 375° for 15 to 20 minutes. Sprinkle powdered sugar heavily on dish towel. Invert cake on towel and roll up. Cool completely.

Filling: Beat all ingredients together until smooth and creamy. After roll is completely cooled, unroll and spread with filling. Re-roll cake and chill.
