  • sugar - 1 c
  • cinnamon - 1/2 tsp
  • cream cheese - 8 oz
  • eggs - 3 item
  • vanilla - 3/4 tsp
  • butter
  • baking soda - 1 tsp
  • powdered sugar - 1 c
  • self-rising flour - 3/4 c
  • walnuts optional - 1 c
  • pumpkin filling* - 2/3 c

How to make pumpkin roll:

Filling:2 Tbsp. butter8 oz. cream cheese3/4 tsp. vanilla1 c. powdered sugar *Pumpkin filling should be 100% natural. Make pumpkin mixture by mixing all cake ingredients except walnuts. Use 10 x 15-inch cookie sheet lined with wax paper. Grease wax paper or spray with cooking spray. Spread pumpkin mixture on wax paper and sprinkle on walnuts. Bake at 350° for 15 minutes. While cake is baking, lay down tea towel on table and sprinkle towel with powdered sugar. When cake is done, turn onto powdered towel. Roll cake up in towel. Let cake stand until you get filling mixed together, then unroll cake and spread filling on cake. Roll cake back up. Chill and serve or wrap in foil and freeze.
