  • sugar - 1 c
  • eggs - 3 item
  • salt - 1/2 tsp
  • flour - 3/4 c
  • vanilla flavoring - 1 tsp
  • baking powder - 1 tsp
  • powdered sugar
  • soft butter - 1/2 c
  • finely chopped pecans - 1 c
  • pumpkin pie spice - 1 Tbsp
  • lemon juice - 1 tsp
  • ground cinnamon - 1 Tbsp
  • ground ginger - 1 tsp
  • ground nutmeg - 1/2 tsp
  • softened cream cheese - 8 oz
  • cooked pumpkin or 2/3 c - 2/3 c

How to make pumpkin roll:

Filling:1 c. powdered sugar8 oz. softened cream cheese1/2 c. soft butter1 tsp. vanilla flavoring Beat eggs at high speed until pale yellow. Gradually add sugar and continue to beat about 5 minutes. Stir in pumpkin and lemon juice. In separate bowl combine flour, baking powder, salt, cinnamon, pumpkin pie spice, ginger and nutmeg. Add to pumpkin mixture.

Pour batter into greased and floured 15 x 10 x 1-inch jellyroll pan. Spread evenly. Sprinkle with nuts. Bake at 375° 12 to 15 minutes until springy. Sprinkle 2 tablespoons powdered sugar on towel. Invert pan on towel while hot. Roll up with towel. Let cool. Unroll and spread with filling. Reroll. Wrap in foil and let stand overnight. Better if it stands in refrigerator overnight. Freezes well.
