Ingredients/Components
- butter, softened - 4 Tbsp
- cinnamon - 2 tsp
- cream cheese - 8 oz
- eggs - 3 item
- vanilla - 1/2 tsp
- salt - 1/2 tsp
- flour - 3/4 c
- nutmeg - 1/2 tsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- powdered sugar
- ginger - 1 tsp
- chopped walnuts - 1 c
- lemon juice - 1 tsp
How to make pumpkin roll:
For Filling:1 c. powdered sugar8 oz. cream cheese4 Tbsp. butter, softened1/2 tsp. vanilla Beat eggs on high speed for 5 minutes; gradually beat in sugar. Stir in pumpkin and lemon juice. Sift flour, baking powder, cinnamon, ginger, nutmeg and salt together. Fold in pumpkin.Spread in a greased and floured 15 x 10 x 1-inch pan. Top with walnuts. Bake for 15 minutes at 375°. Turn out on towel sprinkled with powdered sugar.
Starting at narrow end, roll towel and cake together; cool. Unroll; spread filling over cake, reroll and chill. Freezes well.
For Filling: Combine all ingredients; beat until smooth.
