Ingredients/Components
- sugar - 1 c
- cinnamon - 1/2 tsp
- eggs - 3 item
- vanilla - 3/4 tsp
- flour - 3/4 c
- baking soda - 1 tsp
- pumpkin - 2/3 c
- 10x sugar - 1 c
- soft cream cheese - 8 oz
- Then grease over top of wax paper
How to make pumpkin log:
Grease 10 x 15-inch cookie sheet and place wax paper over pan leaving a couple inches wax paper hang over each end. Then grease over top of wax paper. Mix ingredients. Pour into pan and spread evenly and smoothly in a thin layer. Sprinkle with nuts if desired. Bake about 10 minutes. Will burn easily, watch closely.Cover a tea towel or cotton cloth with a layer of 10x sugar. Remove cake from oven and flip over onto tea towel. Slowly pull off wax paper, then roll cake up with towel, while still hot. Place on a cooling rack and let cool completely. Unroll cake from towel when completely cool. Spread with filling. Reroll. Refrigerate. Slice in desired thickness. Serves approximately 12.Filling:2 Tbsp. soft butter8 oz. soft cream cheese3/4 tsp. vanilla1 c. 10x sugar Mix together until smooth.
