- sugar - 1 c
- cinnamon
- eggs - 2 item
- salt - 1/4 tsp
- baking powder - 1 tsp
- baking soda - 1 tsp
- melted butter - 3/4 c
- canned pumpkin - 1 c
- sifted cake flour
How to make pumpkin cupcakes:
Combine butter and sugar. Beat in eggs, one at a time. Sift in dry ingredients and mix well. Stir in pumpkin. Fill 2 1/2-inch greased cupcake tins 2/3 full. Bake 15 minutes at 375°.Note: Makes 16 and these freeze well.
