Ingredients/Components

  • packed brown sugar - 1 c
  • vanilla extract - 1 Tbsp
  • eggs, beaten - 3 item
  • envelope unflavored gelatin - 1 item
  • whipping cream - 1/2 c
  • 8 oz - 2 pkg
  • ground cinnamon - 1 tsp
  • ground ginger - 1/2 tsp
  • miniature marshmallows optional - 1 c
  • solid pack pumpkin - 1 can
  • graham crust 8-inch

How to make pumpkin cheesecake:

Graham crust should cover bottom and 1 1/2-inches up sides of spring-form pan. Bake in 350° oven for 10 minutes. Combine pumpkin, sugar, eggs, spices and gelatin in medium saucepan. Cover and simmer gently for 30 minutes, stirring occasionally. Beat cream cheese and vanilla until fluffy. Gradually beat in warm pumpkin mixture until well blended. Pour in prepared pan. Cover and refrigerate overnight. Top with marshmallows and whip cream. Makes 8 servings.
