  • sugar - 2 c
  • cinnamon - 1 tsp
  • cream cheese - 8 oz
  • eggs - 3 item
  • chopped pecans - 1 c
  • stick margarine - 1 item
  • nutmeg - 1/2 tsp
  • self-rising flour - 2 c
  • box confectioners sugar - 1 item
  • pecans optional - 1/2 c
  • Icing:1 stick margarine, softened
  • pumpkin, fresh or canned - 2 c

How to make pumpkin cake:

Icing:1 stick margarine, softened8 oz. cream cheese1 box confectioners sugar1 c. chopped pecans Cream margarine until light and fluffy. Add eggs one at a time and beat well. Stir in pumpkin; sift flour and spices together. Add to cream mixture, a little at a time, beating well after each addition. Add pecans. Pour batter into cake pan or angel food pan. Bake at 350° for 1 hour if in angel food pan or 30 to 35 minutes if in round cake pans.

Icing: Cream softened cream cheese and margarine together. Blend in confectioners sugar, a little at a time. Add pecans. Spread over top and sides of cake.
