Ingredients/Components
- sugar
- cinnamon - 1 tsp
- salt
- chopped nuts - 2/3 c
- flour
- water - 2/3 c
- soda - 2 tsp
- eggs, beaten - 4 item
- baking powder - 1/2 tsp
- shortening - 2/3 c
- ground cloves - 1 tsp
- can pumpkin - 1 lb
- raisins or dates, chopped fine - 2/3 c
How to make pumpkin bread:
Cream shortening and sugar thoroughly; add eggs, pumpkin and water. Sift together flour, baking powder, salt, soda and spices. Add to the pumpkin mixture. Stir in nuts and raisins or dates. Pour into two 2-quart, greased loaf pans. Bake at 350° for 1 hour. For best flavor, bake the day before serving.Variation: An orange may be ground up, peel and all, and added to mixture for variety and moistness.
