Potato latkes (pancakes)
Ingredients/Components
- salt - 1 tsp
- all purpose flour - 1/4 c
- vegetable oil - 3/4 c
- large eggs - 4 item
- pepper - 1/2 tsp
- small onion - 1 item
- medium sized baking potatoes, peeled - 4 item
How to make potato latkes (pancakes):
Shred potatoes and onion; transfer to bowl. Stir in flour and next 3 ingredients until blended. Drop mixture by 2 tablespoonfuls into hot oil in a large skillet. Fry over medium-high heat, turning once until browned. Drain on paper towels.Yield: 12 servings. Serve with applesauce.
