Ingredients/Components

  • salt - 1 tsp
  • all purpose flour - 1/4 c
  • vegetable oil - 3/4 c
  • large eggs - 4 item
  • pepper - 1/2 tsp
  • small onion - 1 item
  • medium sized baking potatoes, peeled - 4 item

How to make potato latkes (pancakes):

Shred potatoes and onion; transfer to bowl. Stir in flour and next 3 ingredients until blended. Drop mixture by 2 tablespoonfuls into hot oil in a large skillet. Fry over medium-high heat, turning once until browned. Drain on paper towels.

Yield: 12 servings. Serve with applesauce.
