Ingredients/Components

  • sugar - 1/4 c
  • salt - 1 tsp
  • confectioners sugar - 1 lb
  • eggs, beaten - 2 item
  • plain flour - 5 6
  • warm water - 1/4 c
  • scalded milk - 1 c
  • active yeast - 1 pkg
  • mashed or instant potatoes - 3/4 c

How to make potato doughnuts:

Stir confectioners sugar, water and vanilla. Dissolve yeast in water. Combine milk, shortening, sugar and salt into the scalded milk. Stir in yeast, potato and egg. Gradually add flour to make soft dough. Turn onto floured surface. Knead until soft. Place in greased bowl. Turn so that all sides are greased. Cover. Let rise for 1 1/2 hours. Take out and roll out to 1/2-inch thick. Cut and let dough rise again. Then cut doughnuts and drop in 375° oil.
