Potato candy

Ingredients/Components

• vanilla - 1/2 tsp
• peanut butter - 1 c
• 10x sugar - 1 lb
• medium potatoes - 2 item

How to make potato candy:

Cook potatoes to be mashed, adding only a little salt. To 1/2 cup of mashed potatoes, add 1/2 teaspoon of vanilla and 1 pound of 10x sugar. Make up like a stiff dough, then spread on a piece of wax paper. On this potato mixture, spread 1 cup of peanut butter, then roll up and chill. Slice to look like pinwheels.

For a variety, instead of peanut butter, you can use 1/2 cup coconut, 1/2 cup chopped maraschino cherries or 1/2 cup canned fruit.

Food coloring can be added to mashed potatoes for holidays.
