  • rice - 1 item
  • celery - 1 item
  • green pepper - 1 item
  • canned tomatoes - 1 item
  • pork chops enough for each serving needed or more - 1 item

How to make pork chops and spanish rice:

Cook pork chops in small amount of oil until lightly browned. Place in deep baking pan. On each pork chop, place 1 tablespoon uncooked rice (or more), 1 onion ring, 1 bell pepper ring and a tomato. Chop celery about in the pan. Mash the tomato a little to cover the other vegetables better. Put a little catsup on top of each tomato. Season with salt, pepper, Worcestershire sauce, garlic powder or other seasonings to taste. Pour tomato juice in pan and enough water to cover rice. Cover tightly with foil. Bake in 375° oven for 1 hour and 15 minutes or until liquid is dissolved and rice is done. Each pork chop makes 1 serving and is practically a meal in itself. (I like to add some extra rice.)
