Ingredients/Components
- flour - 4 c
- sugar - 1 c
- margarine - 1 lb
- egg - 1 item
- vanilla - 1 tsp
- finely grated coconut - 1/2 lb
- cans pineapple
- jar applesauce - 1 oz
- tapioca - 4 Tbsp
How to make pineapple squares:
Filling:2 (20 oz.) cans pineapple1 (25 oz.) jar applesauce4 Tbsp. tapioca sugar to taste (5 Tbsp.) Prepare filling: Mix all ingredients and boil until thickened. Remove from heat. Cool.Prepare dough: Cream margarine and sugar. Add egg and vanilla, then put in dry ingredients. Reserve 1 cup dough; put in freezer. Pat dough onto cookie sheet. Pour filling over dough. Grate the reserved dough over the top. Bake at 350° for 45 to 50 minutes.
If you want the top to be a little brown, brush top with a little milk before baking.
