  • sugar - 1 c
  • eggs - 3 item
  • milk - 1/4 c
  • flour
  • cornstarch - 2 Tbsp
  • Crisco - 3/4 c
  • cream of tartar
  • can crushed pineapple in heavy syrup
  • heaping baking soda - 1/2 tsp

How to make pineapple bars:

Filling:1 large (20 oz.) can crushed pineapple (in heavy syrup)2 Tbsp. cornstarch1/2 c. sugar Make filling first. Mix ingredients well and cook in saucepan until thick (10 to 15 minutes). Stir constantly. Let cool.

Beat together eggs, sugar and Crisco. Mix baking soda and cream of tartar in milk and add to creamy mixture. Work in flour (with hands). Divide dough in half.

Grease and flour 2 cookie sheets. Put 1/2 dough on each. Use rolling pin to flatten, then pat into corners. Cut down middle lengthwise so there are 2 rolls on each pan. Put 1 to 1 1/2 inches cooled filling down middle of each roll. Fold long sides over filling, using a spatula. Try to overlap as much as possible but don't pinch. Bake at 375° until golden brown (10 to 15 minutes). Slice at an angle when cooled. After loaves are baked and cooled, glaze both sides of each roll with knife.

Glaze: Beat 1/2 cup powdered sugar and 2 tablespoons softened oleo with fork. Add water to make paste.
