Persimmon cookies
Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- vanilla - 1 tsp
- butter or margarine - 1 c
- salt - 1/2 tsp
- chopped nuts - 3/4 c
- flour - 3 c
- nutmeg - 1/2 tsp
- soda - 1 tsp
- baking powder - 1 tsp
- egg - 1 item
- lemon juice - 1 tsp
- brandy or orange juice - 2 Tbsp
- persimmon puree - 1 c
How to make persimmon cookies:
Mix thoroughly the persimmon and soda; let stand while creaming together the butter and sugar until light and fluffy. Beat in egg, vanilla, lemon juice and brandy, then add persimmon and mix until blended.Sift flour, measure and sift again with baking powder, salt, cinnamon and nutmeg. Gradually blend into creamed mixture. Add nuts and mix just until well blended.
Drop level tablespoon of dough, 2 inches apart, onto lightly greased baking sheet. Bake at 375° for 12 to 14 minutes. Makes 5 dozen.
