Ingredients/Components

  • butter or margarine - 2 Tbsp
  • cornstarch - 2 Tbsp
  • paprika - 1 Tbsp
  • sliced green onions - 1 c
  • hot cooked rice - 3 c
  • cloves garlic, crushed - 2 item
  • beef broth
  • fresh tomatoes, cut in eighths - 2 item
  • lean beef round steak - 1 lb
  • each soy sauce and water - 1/4 c
  • green bell peppers, cut in strips - 2 item

How to make pepper steak:

While rice is cooking, pound steak to 1/4-inch thickness. Cut steak into 1/4-inch wide strips. Sprinkle meat with paprika, salt and pepper. Allow to stand while preparing other ingredients.

Using a large skillet, brown meat in butter. Add garlic and beef broth. Cover and simmer 30 minutes. Stir in onions and green peppers. Cover and cook 5 minutes more.

Blend cornstarch, water and soy sauce. Stir into meat mixture. Cook, stirring until thickened, about 3 minutes. Add tomatoes and stir gently. Serve over rice.
