Pecan cake with praline glaze
Ingredients/Components
- sugar
- eggs - 5 item
- butter - 1/4 c
- buttermilk - 1 c
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- all-purpose flour
- whipping cream - 1/4 c
- raisins - 1 c
- pecan halves - 1/2 c
- softened butter - 1 c
- ground nutmeg
- bourbon - 1/2 c
- coarsely chopped pecans - 2 c
- Cover and refrigerate at least one hour
How to make pecan cake with praline glaze:
Combine raisins and bourbon, stirring well. Cover and refrigerate at least one hour. Cream butter. Gradually add sugar, beating well. Add eggs, 1 at a time, beating after each addition. Combine dry ingredients. Add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture. Mix well after each addition. Fold in pecans and raisin mixture. Pour batter in greased and floured tube pan. Bake at 325° for 1 hour and 30 minutes or until pick inserted in center comes out clean. Cool in pan ten minutes. Remove to wire rack and drizzle glaze over cake. Cool.Praline Glaze:1/2 c. firmly packed brown sugar1/4 c. sugar1/4 c. butter1/4 c. whipping cream1/2 c. pecan halves Combine first 4 ingredients in a heavy saucepan. Cook over low heat, stirring constantly until mixture reaches soft ball stage (240°). Remove from heat and stir in pecans. Yields about 1 cup.Recipe categories: Desserts, Cakes, Fruit.
