Ingredients/Components
- eggs - 6 item
- salt - 1/2 tsp
- flour - 4 c
- brown sugar - 1 lb
- butter - 1 lb
- baking powder - 1 tsp
- pecans - 1 lb
- lemon extract - 1/2 oz
- pineapple - 1/2 lb
- candied cherries - 1/2 lb
How to make pecan cake:
Cream butter and sugar; add egg yolks, one at a time, and beat well. Add 2 cups flour alternately with lemon extract. Fold in chopped fruit and nuts, dredged with the last 2 cups flour. Fold in egg whites. Let stand overnight in refrigerator.Bake in slow oven at 300° for 3 to 3 1/2 hours. Line pan with brown paper.
