  • eggs - 6 item
  • salt - 1/2 tsp
  • flour - 4 c
  • brown sugar - 1 lb
  • butter - 1 lb
  • baking powder - 1 tsp
  • pecans - 1 lb
  • lemon extract - 1/2 oz
  • pineapple - 1/2 lb
  • candied cherries - 1/2 lb

How to make pecan cake:

Cream butter and sugar; add egg yolks, one at a time, and beat well. Add 2 cups flour alternately with lemon extract. Fold in chopped fruit and nuts, dredged with the last 2 cups flour. Fold in egg whites. Let stand overnight in refrigerator.

Bake in slow oven at 300° for 3 to 3 1/2 hours. Line pan with brown paper.
