Ingredients/Components
- sugar - 3/4 c
- vanilla - 1 tsp
- light corn syrup - 3/4 c
- peanut butter - 1 c
- crisp rice cereal - 6 c
- butter, margarine or cooking spray - 1 item
How to make peanut butter crispies:
In a 3-quart microwave-safe casserole, combine the sugar and corn syrup. Cover with lid or vented plastic wrap. Remember to be careful around hot steam when the lid or plastic wrap is removed. Microwave on 100% power for 4 minutes. Stir and scrape sides every minute, re-covering the dish each time. While mixture is cooking, lightly grease or spray 8 x 12-inch glass dish. Set aside.Add the peanut butter to syrup mixture. Microwave on 100% power for 15 seconds. Stir mixture until it is smooth. Add the vanilla and stir. Add the cereal and mix until it is thoroughly covered with the peanut butter mixture. Press the mixture into the buttered dish. Chill until firm. Cut into bars and serve.
