Peanut butter cheesecake
Ingredients/Components
- graham cracker crumbs
- sugar - 2 c
- semi-sweet chocolate - 4 oz
- vanilla - 2 tsp
- pkg - 2 oz
- whipping cream
- butter, melted - 1/4 c
- plus 2 tsp - 3 Tbsp
- creamy peanut butter - 2 c
- firmly packed light brown sugar - 1/4 c
- 1/4 stick butter, melted - 2 Tbsp
How to make peanut butter cheesecake:
Crust:1 c. graham cracker crumbs1/4 c. firmly packed light brown sugar1/4 c. butter, melted Combine crumbs, brown sugar and butter. Press into bottom and halfway up sides of 9-inch spring-form pan.Beat the peanut butter, sugar, cream cheese, butter and vanilla in a large bowl with electric mixer until smooth and creamy. Beat until soft peaks form. Fold in whipped cream. Spoon into crust. Refrigerate at least 6 hours.
Melt chocolate with coffee in double boiler. Spread onto filling. Refrigerate until firm.
