  • sugar - 2/3 c
  • cinnamon - 1/4 tsp
  • vanilla - 1/4 tsp
  • milk - 1 c
  • salt - 1/2 tsp
  • flour - 1 c
  • baking powder - 3 tsp
  • lemon juice - 1 tsp
  • egg, beaten - 1 item
  • melted shortening - 1/4 c
  • diced peaches - 1 c

How to make peach muffins:

Beat eggs and milk together. Add shortening, sugar, salt, vanilla and lemon juice. Sift cinnamon, flour and baking powder. Fold in egg mixture until smooth. Fold in peaches. Fill greased muffin cups 2/3 full. Bake in 450° oven for 15 minutes.
