Pasta primavera
Ingredients/Components
- butter or margarine - 3 Tbsp
- clove garlic, minced - 1 item
- grated Parmesan cheese - 1/3 c
- chopped onion - 1/2 c
- dried thyme, crushed - 1 tsp
- cashews - 1 c
- salt and pepper - 1/4 tsp
- broccoli flowerets - 2 c
- dry wine optional - 1/4 c
- fresh or frozen pea pods - 1 c
- cooked linguine - 3 c
- carrots, bias sliced - 2 item
How to make pasta primavera:
In a 10-inch skillet, melt butter or margarine. Stir in broccoli, carrots, onion, garlic, thyme, salt and pepper. Cook 5 minutes or until broccoli is crisp-tender. Add pea pods and cashews. Cook 2 minutes more. Add wine, if desired.Toss pasta with vegetables and cheese. Makes 4 servings.
