Ingredients/Components

  • salt - 2 tsp
  • buttermilk - 1/2 c
  • cooking oil - 2 Tbsp
  • pepper - 1/8 tsp
  • fine dry bread crumbs - 1 c
  • finely chopped parsley - 2 Tbsp
  • dried leaf thyme - 1/2 tsp
  • fish fillets sole or haddock - 2 lb

How to make oven fried fish:

Separate fillets. Heat oven to 500°. Oil a 13 x 9 x 2-inch glass baking dish. Dip fish in combination of buttermilk, salt, pepper and thyme, then in a mixture of crumbs and parsley to coat both sides. Lay the fillets in prepared baking dish in a single layer if possible. Drizzle with cooking oil. Bake 15 to 20 minutes or until fish is golden and flakes easily with a fork. Do not turn. Serve immediately.
