  • graham cracker crumbs - 1 c
  • envelope unflavored gelatin - 1 item
  • orange juice - 1 c
  • packets Equal - 12 item
  • light Cool Whip - 2 c
  • light margarine, melted - 3 Tbsp
  • small can mandarin oranges, drained and chopped - 1 item
  • light soft cream cheese
  • part skim Ricotta cheese or fat-free - 1 c

How to make orange cheesecake:

Filling:12 oz. light soft cream cheese1 c. part skim Ricotta cheese or fat-free12 packets Equal1 envelope unflavored gelatin1 c. orange juice2 c. light Cool Whip1 small can mandarin oranges, drained and chopped For crust, blend graham crackers and melted margarine and press into the bottom of a 9-inch spring-form pan sprayed with nonstick vegetable spray. Bake in a 350° oven for 8 minutes; cool. Place cream cheese and Ricotta in a mixing bowl and blend thoroughly with an electric mixer. Add Equal; blend. In small saucepan, sprinkle gelatin over orange juice. Let soften 1 minute. Heat, stirring constantly until gelatin dissolves, about 3 minutes. Let cool. Add cooled gelatin mixture to cheese mixture; fold in Cool Whip. Stir in mandarin oranges. Spoon into crust and spread evenly. Chill 4 to 6 hours. Makes 8 slices.
