Ingredients/Components
- flour - 1 Tbsp
- butter - 2 Tbsp
- water - 4 c
- melted butter - 2 Tbsp
- consomme - 2 c
- grated Swiss cheese - 1/4 lb
- boiled milk - 1/4 c
- medium onions, sliced thin - 3 item
- dried slices French bread - 6 item
How to make onion soup:
In a heavy skillet, cook onion in heated butter until slightly browned. Sprinkle with flour and cook over low flame until golden, never allowing them to become dark brown. Add consomme and water. Bring to boil, stirring constantly with wooden spoon, then simmer for 20 minutes, uncovered. Add milk.Pour into casserole or bowls that are ovenproof. Place slices of bread on top. Sprinkle generously with cheese. Add pepper. Sprinkle with melted butter. Brown quickly under broiler flame.
